What is the mineral oil treatment and do I have to do it?

Applying food-safe mineral oil to soapstone speeds up and evens out the natural darkening process the stone goes through over time. It is completely optional. If you skip it, the stone will still develop its patina on its own, just unevenly at first as the areas that see the most use darken faster than the rest.

How does soapstone compare to granite?

Granite is harder and more scratch-resistant, while soapstone is softer but naturally nonporous and far more resistant to heat and chemicals. Granite needs periodic sealing; soapstone does not.
